Since 2000, Niko Romito has been running the restaurant Reale with Cristiana Romito. A self-taught chef, deeply attached to his native Abruzzo, in just 7 years he has earned three Michelin stars. He began in the town of Rivisondoli, in the bakery that his family had turned into a trattoria, and in 2011 he moved Reale to Casadonna, a 16th-century former monastery in Castel di Sangro. Through relentless research and a strong entrepreneurial drive, Romito pursued a path of essentiality, balance and taste. In a short time he has been able to create an incisive and personal culinary language, along with a complex system that perfectly combines haute cuisine, various catering formats, top-level training and products for home consumption.
“It is often said of my cooking that it’s simple. This is very true, in the sense that it lacks complication, yet there is a considerable complexity. Complexity in cooking can be beneficial, complication never”. Simplicity is the cardinal principle of Niko Romito, both as a man and a chef. His passions are the works of Mario Giacomelli and Ettore Spalletti, the sprawling spaces of the Abruzzo highlands, natural materials like stone, wood and iron. If he had not become a chef he would have been an architect.
From the outset, Cristiana Romito has been indispensable in Niko’s ‘system’. The two siblings are inseparable. As General Manager of Casadonna, named by the Guida di Identità Golose (2012) as Best Italian Maître D’, she runs the young team of the Reale dining room along with sommelier Gianni Sinesi. Moving in perfect harmony, always in dialogue with the kitchen, Cristiana, Gianni and the floor staff make every seating an experience of choreographed precision.
