The Reale wine cellar occupies what was once the stalls of Casadonna. Conserved here, among the original water troughs from 500 years ago, are approximately 9,000 bottles of wine from more than 500 vintners, prevalently from Italy and Europe. Regardless of the season, the temperature is kept at a more or less constant 16-18C°, with a humidity level between 70 and 90%. The bottles are entrusted to stewardship of Gianni Sinesi, the sommelier who has been working alongside Cristiana and Niko since 2004. The logic of the wine selection and pairings follows the philosophy of Reale’s cuisine, with an emphasis on cleanliness and enjoyment, and an eye toward great drinkability even among the youngest labels. A network of relationships with small, top-quality vintners allows Gianni to offer renowned wines alongside lesser known but nonetheless noteworthy ones. Particular focus is dedicated to Italy, above all to Abruzzo, his adopted home, about whose wine producers Gianni delights in helping customers discover.
