COLOMBA NIKO ROMITO, A TRIBUTE TO LIGHTNESS

Niko Romito’s research on the balance between taste and health, accompanies the Easter holidays with his Colomba in both classic and chocolate version.

Castel di Sangro, February 18, 2021. This year more than ever, the most traditional and well-known Easter pastry in Italy, is an invite to come together and share moments of precious union.

The recipe of the Colomba, studied by the Chef and his pastry team of the Laboratory, includes three stages of fermentation and four processes of the dough that maintains moisture and results in a light, soft and perfectly alveolar consistency. A delicious and delicate baked oven pastry, enveloped in citrus and floral notes, is ideal for breakfast and for the next day.

Produced in a limited edition and packaged in its elegant white box, the Colomba Niko Romito is about the Chef’s passion for finding the best raw materials: the mother yeast that comes from the fermentation of the grapes of Casadonna’s vineyard, the organic soft wheat flour free-range egg yolk, Bourbon vanilla beans, dairy butter, organic citrus honey, fine Tanzania chocolate flakes, candied orange zests handcrafted in the Laboratory and an organic Sicilian almond emulsion that replaces a part of the butter and conveys, together with the cinnamon, delicate floral notes.

The Colomba Niko Romito is light with an intense and fresh taste that results in a balanced sweetness. To top it off, the final touch is an almond and raw sugar praline that makes a sweet crunchy coating.

The absence of preservatives and the reduced use of butter in favor of vegetable fats, determines an expiration date of 45 days.

The organic and vegan line of jams and fruit juices produced within Niko Romito’s Laboratory widens its range: in addition to peach and strawberry, raspberry, apricot, cherry and blueberry in their purest expression.

Organic, without eggs and lactose, it is made with oat milk and fine Ivory Coast chocolate. Light, delicious and crispy, this biscuit is a cuddle for the entire family.

Over 90% of fruit coming from organic agriculture, between 5% and 7% of organic sugar added to the total amount of fruit and lemon juice.
